“Anything” Muffin Tin Frittatas1

This will be more of an instructional post than a true recipe.  The reason is because once you learn the portions and cooking times, you can modify this to suit your tastes.  This is sort of like a portable version of my Anything Scramble

For mine, I like to use only vegetables and a little cheese.  For kids, I would do ham or sausage, cheese, and probably a more familiar vegetable like red bell pepper.  For myself, I’d probably eat 2 muffins as my meal.  For the kids, I’d give them one muffin and some carbohydrates.

These are great because you can refrigerate them and microwave them by portions.  It’s a convenient way to eat healthy on the go.  This recipe will make the standard muffin pan’s 12 muffins.  But once you’ve got the method, you can do as many or as few as you want.

 

Total Time:  50 minutes

Makes 12 muffins

Difficulty Level:  Easy

 

Ingredients

 

13 eggs

2/3 cup milk

Cooking spray

Salt and pepper

Veggies: tomatoes, spinach, onion, scallion, mushroom, or bell pepper

Meats:  pork or turkey sausage, bacon, or ham

Starches:  frozen hashbrowns

Shredded or crumbled cheese:  feta, cheddar, gouda, mozzarella, provolone

 

  1. Preheat the oven to 350 degrees.  Whisk the eggs, milk, and salt and pepper in a large bowl.
  2. Choose your add-ins. Remember to dice up everything very small, so you can get a good variety in each muffin.
  3. Spray the muffin tin thoroughly with cooking spray. Add your veggies, meat, and/or starches.
  4. If you want cheese, sprinkle it on top.
  5. Pour an even amount of the egg mixture in each tin.
  6. Bake for 30 minutes.
  7. Remove from oven and let cool for 5 to 10 minutes before removing from tins. Remove carefully with a spoon, and let cool thoroughly before storing.
